Cheese Tortellini Soup



Fixins

1 tablespoon vegetable oil
1 pound ground Italian Sausage
1/2 cup diced onion (about 1/2 medium sized onion)
1 tablespoon minced garlic
1-28 oz can crushed tomatoes
1-32. oz. box of vegetable broth (chicken works too)
3 tablespoons fresh chopped basil
1 teaspoon salt
1/2 teaspoon pepper
1 19-ounce package refrigerated tortellini
1 8 oz bag of spinach

Your Concoction

Heat a large, heavy bottomed pan over medium-high heat. Heat vegetable oil and add diced onion and crumbled Italian sausage. Saute until onions are soft and the sausage is browned. Add garlic and cook for 3 more minutes to release the flavor.
Stir in crushed tomatoes, chicken broth, basil, salt and pepper. Bring to a boil, reduce heat to low, and cover. Let soup simmer for 20-30 minutes.
Add tortellini and spinach and simmer for about ten minutes, until pasta is tender.
Serve with shredded Parmesan or Italian cheese blend and garlic bread.

Borracho Beans




Fixens

1 lb dried pinto bean
3 quarts water
12 ounces dark beer (Mexican)
3 garlic cloves, minced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon Mexican oregano
3 -6 jalapeno peppers, seeded and minced
1 Jimmy Dean sausage pack
1 rope of smoked green onion sausage
1 medium onion, chopped
1 can fire roasted tomatoes
1 cup cilantro, chopped

Your concoction

In your bean pot brown the Jimmy Dean sausage, green onion sausage, jalapeno and onion. When browned and onion starts to get soft add the garlic and seasonings. Stir for a bit to let the flavors mix. Pour in the beer and water. Bring to a boil and reduce heat to medium low. Stir in the beans. Let simmer until the beans and juice are to your liking consistency wise. Put in the tomatoes and cilantro. Cook for another 5 minutes. Serve over rice if you wish. You can always add in some of your favorite hot sauce as well. ENJOY!!

Seafood Rice Dressing




Fixens

1 lb to 1 1/2 lb ground beef (chuck preferred)
1 (10 oz) can cream of mushroom soup - undiluted
1 (101/2 oz) can French onion soup
1 (6 oz) can mushroom steak sauce
1/2 cup celery, chopped
½ cup bell pepper, chopped
½ cup green onions, chopped
1 tbsp chopped garlic
½ cup parsley, chopped
1 cup raw rice
1 lb crawfish or shrimp
2 tbsp oil
red pepper to taste
1 tbsp onion powder
1 tbsp garlic powder
1/2 to 1 pound Jimmy Dean pork sausage

Your Concoction

In large skillet add oil. Cook the ground beef and pork with vegetables until meat is brown. Drain excess oil. Add crawfish or shrimp to the skillet along with the rest of the ingredients,

Transfer to a large casserole dish, .Cover and cook in oven for one hour at 350 degrees, check if rice is done, if not recover and cook 10 more minutes.
